When summer rolls around, nothing beats the joy of pulling a frozen treat from the mold—especially when it’s homemade.

These cherry vanilla cream popsicles are one of my favorite warm-weather indulgences.

They’re bursting with fresh cherry flavor, layered with fluffy whipped cream, and naturally sweetened with raw honey.

Best of all, they look stunning with their swirled, marbled design—and they taste even better.

Why I Love This Recipe

Gorgeous marbled look with no extra effort

Naturally sweetened with raw honey

Uses fresh or frozen cherries

Creamy, fluffy texture with every bite

Great for kids, guests, or just yourself on a hot day

What You’ll Need (Ingredient Highlights)

Cherries – Fresh or frozen, they’re the vibrant heart of the popsicle

Coconut water – Adds hydration and a subtle tropical touch

Raw cream or whipping cream – Whips into a luscious base for the swirl

Vanilla extract – Brings mellow warmth that complements the cherries

Raw honey – Light, floral, and perfectly sweet without processed sugar

Pro Tips Before You Start

Chill the bowl and cream – Cold tools make better whipped cream

Use a blender for the cherries – You want a smooth puree, no chunks

Don’t over-whip – Stop once the cream holds soft peaks

Alternate layers – Use a spoon or spatula to get those gorgeous swirls

Tap the mold – This helps the cream settle and eliminates air gaps

How to Make Cherry Vanilla Cream Popsicles

Step 1: Prep the Bowl

Place a large mixing bowl in the refrigerator to chill overnight or at least a few hours before whipping.

Step 2: Blend the Cherries

If using frozen cherries, thaw them first.

Blend cherries with coconut water until smooth. Set aside.

Step 3: Whip the Cream

Remove the chilled bowl from the fridge.

Using a mixer, whip the cream, honey, and vanilla on low for 30 seconds, then on medium for 1–1½ minutes until thick and fluffy.

Step 4: Layer the Popsicles

Spoon a bit of whipped cream into each popsicle mold.

Add cherry puree, then alternate layers, tapping gently after each to help settle.

Repeat until molds are filled.

Step 5: Freeze

Place the molds in the freezer and freeze for 6–8 hours, preferably overnight.

Step 6: Unmold and Serve

Run popsicle molds under warm water for a second or two to release the pops.

Enjoy immediately.

What to Serve It With

A fruit platter for a summer picnic

Sparkling lemonade or iced herbal tea

Light almond or coconut cookies

A poolside snack board with fresh berries and cheese

Greek yogurt drizzled with honey

Variations / Substitutions

Use blueberries or strawberries instead of cherries

Add lemon zest for a citrusy kick

Replace raw cream with coconut cream for a dairy-free version

Add chia seeds to the cherry mix for texture

Use maple syrup if honey isn’t available

Storage & Leftovers

Freeze – Popsicles keep well in the freezer for up to 2 weeks

Cover properly – Store molds with lids or use parchment to prevent freezer burn

Re-freeze quickly – If they start to melt while unmolding, pop them back in for a few minutes

Avoid air pockets – Tap the mold during layering for a smoother finish

Don’t overfill – Leave a little space at the top to allow for expansion

FAQs

Can I use canned cherries?
Yes, but drain them well and skip any added syrups.

How do I make it dairy-free?
Use chilled coconut cream in place of whipping cream and follow the same steps.

What if I don’t have popsicle molds?
Use paper cups with wooden sticks or silicone ice trays as a creative alternative.

Can I skip the honey?
Yes, but the popsicles will be more tart—add a little banana or maple syrup instead.

Do I need to strain the cherry puree?
No, unless you want an ultra-smooth texture without pulp.

Can kids help make this?
Absolutely—it’s fun, simple, and safe with a little adult guidance.

Will the layers mix too much?
If you alternate gently and tap the molds, you’ll get a beautiful marbled look.

Final Thoughts

These cherry vanilla cream popsicles are as refreshing to eat as they are beautiful to look at.

They strike the perfect balance between creamy and fruity, sweet and tangy.

Whether you’re enjoying them by the pool or after dinner, they always deliver that little moment of frozen happiness.
