Some dishes just feel like a warm hug—and these Baked Turkey Lasagna Roll-Ups are exactly that.

They’ve got all the comfort of classic lasagna, but with a fun, rolled-up twist.

Filled with tender ground turkey, creamy ricotta, savory marinara, and melty cheese, these individual rolls are satisfying, easy to portion, and perfect for leftovers.

They’re great for weeknights, Sunday dinners, or meal prep for the week ahead.

Why You’ll Love This Recipe

Classic lasagna flavor with a lighter twist

Perfectly portioned and freezer-friendly

Packed with protein and cheesy goodness

Rolls stay intact and bake evenly

Great for meal prep or make-ahead entertaining

What You’ll Need (Ingredient Highlights)

Lasagna noodles – cooked al dente, rolled and filled

Ground turkey – lean and full of flavor

Ricotta cheese – creamy and smooth for the filling

Mozzarella & parmesan – for melt and sharpness

Egg – binds the filling together

Marinara sauce – store-bought or homemade

Garlic, basil, oregano – flavor-boosting classics

Salt & pepper – always essential

Pro Tips Before You Start

Boil lasagna noodles just until al dente—they’ll finish cooking in the oven

Let noodles cool slightly before rolling to avoid tearing

Use a ¼ cup of filling per noodle for even rolls

Spread a little marinara on the bottom of your pan to prevent sticking

Let the roll-ups rest after baking—they hold their shape better when served

How to Make Baked Turkey Lasagna Roll-Ups

Step 1: Cook the Noodles

Boil lasagna noodles according to package directions until al dente.

Drain and lay flat on a clean surface or parchment paper to cool.

Step 2: Brown the Turkey

In a skillet over medium heat, cook ground turkey until browned and cooked through.

Add minced garlic, basil, oregano, salt, and pepper.

Stir to combine and set aside to cool slightly.

Step 3: Mix the Cheese Filling

In a bowl, combine ricotta cheese, 1 cup mozzarella, parmesan, egg, and a pinch of salt.

Mix until smooth.

Step 4: Assemble the Roll-Ups

Spread about 1–2 tablespoons of the ricotta filling on each noodle.

Top with a spoonful of turkey mixture. Roll up tightly.

Step 5: Prep the Baking Dish

Spread ½ cup marinara sauce on the bottom of a greased 9×13″ baking dish.

Place roll-ups seam-side down in the dish.

Step 6: Top with Sauce and Cheese

Spoon remaining marinara over the roll-ups.

Sprinkle the top with the rest of the mozzarella and a bit more parmesan if desired.

Step 7: Bake

Cover with foil and bake at 375°F (190°C) for 25 minutes.

Uncover and bake another 10 minutes until bubbly and golden on top.

Step 8: Rest and Serve

Let the roll-ups rest 5–10 minutes before serving.

Garnish with chopped parsley or extra parmesan.

What to Serve It With

Garlic bread or warm ciabatta

Caesar salad or a simple green salad

Roasted zucchini or asparagus

A glass of red wine like Chianti or Pinot Noir

Crushed red pepper for those who like a kick

Variations / Substitutions

Use ground beef or sausage instead of turkey

Add spinach or shredded zucchini to the filling

Make it vegetarian by skipping the meat and adding mushrooms

Swap ricotta for cottage cheese for a lighter option

Use homemade marinara for an extra touch

Storage & Leftovers

Store leftovers in an airtight container for up to 4 days

Reheat in the microwave or oven at 350°F until warmed through

Freeze unbaked or baked roll-ups—wrap individually for grab-and-go meals

Thaw overnight in fridge and bake or reheat as needed

Add extra marinara before reheating to keep things saucy

FAQs

Can I make this ahead of time?
Yes! Assemble everything and refrigerate up to 24 hours before baking.

Can I freeze the roll-ups?
Definitely. Freeze before or after baking. Wrap tightly and store for up to 2 months.

What noodles work best?
Regular lasagna noodles work best. Avoid the “oven-ready” kind—they crack when rolled.

Can I add vegetables?
Yes! Sautéed spinach, mushrooms, or shredded carrots are great mix-ins.

What’s the best cheese combo?
Ricotta for creaminess, mozzarella for melt, and parmesan for sharpness.

Feel free to try provolone or asiago too.

How many servings does this make?
This recipe makes about 8–10 roll-ups, perfect for 4–5 people.

Easily doubled for a crowd!
