These air fryer blooming potatoes are a stunning and delicious side dish that’s perfect for dinner or snacks. Crispy on the outside, tender on the inside, and infused with aromatic herbs, they’re easy to make and customizable with your favorite toppings.

Ingredients
  

  • 2 medium potatoes sliced crosswise and lengthwise (base intact)
  • 1 tablespoon olive oil or spray oil
  • Salt and pepper to taste
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried rosemary
  • 1 tablespoon fresh parsley finely chopped (for garnish)
  • Optional toppings: butter bacon crumbles, shredded cheese, sour cream, chives or green

Method
 

  1. Wash and scrub potatoes, then pat dry.
  2. Slice each potato crosswise and lengthwise, leaving the base intact.
  3. Microwave the potatoes on high for 5–7 minutes until slightly softened.
  4. Preheat the air fryer to 390°F (195°C).
  5. Brush potatoes with olive oil or melted butter.
  6. Season with salt, pepper, garlic powder, thyme, and rosemary.
  7. Place in air fryer and cook for 10–12 minutes until golden and crispy.

Notes

  • Use two chopsticks or wooden spoons on either side of the potato when slicing to avoid cutting all the way through.
  • For extra cheesy potatoes, sprinkle shredded cheese on top during the last 2 minutes of cooking.
  • These potatoes pair well with grilled meats, roasted chicken, or a fresh salad.
