Method
- Wash and scrub potatoes, then pat dry.
- Slice each potato crosswise and lengthwise, leaving the base intact.
- Microwave the potatoes on high for 5–7 minutes until slightly softened.
- Preheat the air fryer to 390°F (195°C).
- Brush potatoes with olive oil or melted butter.
- Season with salt, pepper, garlic powder, thyme, and rosemary.
- Place in air fryer and cook for 10–12 minutes until golden and crispy.

Notes
- Use two chopsticks or wooden spoons on either side of the potato when slicing to avoid cutting all the way through.
- For extra cheesy potatoes, sprinkle shredded cheese on top during the last 2 minutes of cooking.
- These potatoes pair well with grilled meats, roasted chicken, or a fresh salad.
