Ingredients
  

  • 3 –4 medium apples peeled, cored, and sliced
  • 3 large eggs
  • ¾ cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • Powdered sugar for dusting
  • Flour for pan

Method
 

  1. Preheat oven to 350°F. Grease and flour a 9-inch springform pan.
  2. Peel and thinly slice the apples. Set aside.
  3. In a large bowl, beat eggs and sugar 6–8 mins until thick and pale.
  4. Add vanilla. Gently fold in sifted flour until combined.
  5. Layer apples into the pan. Pour batter over.
  6. Bake 45–50 mins until golden and a toothpick comes out clean.
  7. Let cool 10 mins. Dust with powdered sugar and serve.
