Ingredients
  

  • 4 chicken breasts boneless and skinless
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon coarse ground black pepper
  • 4 tablespoons flour
  • 2 large eggs
  • 1 cup panko bread crumbs
  • 1/2 cup Parmesan cheese grated
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons butter
  • 1 cup marinara sauce
  • 1 cup mozzarella cheese shredded

Method
 

  1. Preheat oven to 375°F. Lightly grease or line a baking sheet.
  2. Pound chicken breasts to ½ inch thickness. Season with salt and pepper.
  3. Prepare 3 shallow bowls: flour, beaten eggs, panko + Parmesan mix.
  4. Dredge chicken in flour, egg, then breadcrumb mixture.
  5. Heat olive oil and butter in a skillet over medium-high.
  6. Pan-fry chicken 3–4 minutes per side until golden.

Notes

Pounding the chicken ensures even cooking.
