Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 1 cup panko breadcrumbs
  • 2 teaspoons garlic powder
  • 1 teaspoon dried Italian herbs
  • Salt and pepper to taste
  • 2 large eggs
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • Fresh parsley for garnish optional

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Line a baking sheet with parchment or grease lightly.
  3. In a shallow dish, mix Parmesan, panko, garlic powder, herbs, salt, and pepper.
  4. In another dish, beat the eggs.
  5. Dip each chicken breast in egg, then coat with the breadcrumb mixture.
  6. Arrange chicken on baking sheet and drizzle with olive oil.
