Ingredients
  

  • 3 medium bananas about 1 cup mashed
  • ½ cup mayonnaise or dressing
  • 1 egg room temperature
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup granulated sugar
  • ½ cup chopped pecans optional

Method
 

  1. Preheat oven to 350°F. Grease or line an 8×4-inch loaf pan.
  2. In a bowl, mash the bananas. Stir in mayonnaise and egg until smooth.
  3. In a separate bowl, mix flour, sugar, baking soda, salt, and pecans.
  4. Add the wet mixture to the dry and stir just until combined (batter will be thick).
  5. Pour into the prepared pan and bake for 60–70 minutes or until a toothpick comes out
