Ingredients
  

  • 3 very ripe medium bananas mashed (about 1 ¼ cups)
  • 3 eggs
  • 3 tablespoons unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 2 ½ cups packed blanched fine almond flour
  • ½ cup flaxseed meal
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup dark chocolate chips dairy-free if desired
  • 2 tablespoons extra chocolate chips for topping

Method
 

  1. Preheat oven to 350°F.
  2. Line an 8.5 x 4.5 inch loaf pan with parchment and spray with nonstick spray.
  3. In a large bowl, whisk mashed bananas, eggs, almond milk, and vanilla until smooth.
  4. Add almond flour, flaxseed meal, cinnamon, baking soda, and salt.
  5. Stir until just combined.
  6. Fold in ½ cup chocolate chips.
  7. Pour batter into prepared pan, smooth the top, and sprinkle with remaining 2 tablespoons chocolate chips.

Notes

  • For best flavor and moisture, use very ripe bananas with brown spots.
