Ingredients
  

  • 6 slices brioche Texas toast, or sandwich bread
  • 1 large overripe banana mashed or blended
  • 2 large eggs
  • ½ cup milk whole or half & half
  • 1 tbsp sugar
  • 1 tsp vanilla extract
  • ½ tsp cinnamon
  • ¼ tsp salt
  • tsp nutmeg
  • 4 tbsp butter
  • Optional toppings: maple syrup banana slices, powdered sugar, peanut butter, whipped cream, berries

Method
 

  1. Whisk or blend banana, eggs, milk, sugar, vanilla, cinnamon, salt, and nutmeg until smooth.
  2. Heat butter in skillet over medium heat.
  3. Dip bread slices in banana mixture, coating both sides.
  4. Cook 2–3 minutes per side until golden brown.
  5. Serve warm with syrup, fruit, or toppings of choice.
