Ingredients
  

For the Muffins
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 4 medium over-ripe bananas mashed
  • ½ cup granulated sugar
  • ½ cup packed light brown sugar
  • 1 large egg
  • ¼ cup vegetable oil
  • 2 teaspoons vanilla extract
  • ½ cup chopped pecans
Cream Cheese Swirl
  • 4 oz cream cheese softened
  • 2 tablespoons granulated sugar
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 2 teaspoons milk if needed

Method
 

  1. Preheat oven to 350°F.
  2. Line muffin pan with liners.
  3. In a medium bowl, whisk together flour, baking soda, baking powder, and salt.
  4. In a large bowl, combine mashed bananas, sugars, egg, oil, and vanilla. Mix well.
  5. Add dry ingredients into the wet mixture and stir until combined. Fold in pecans.
  6. Fill each muffin cup ¾ full with batter.
  7. In another bowl, beat cream cheese, sugar, egg yolk, and vanilla.

Notes

  • Use very ripe bananas (lots of brown spots!) for the sweetest, most flavorful results.
