Ingredients
  

  • 3 –4 ripe bananas mashed
  • cup butter melted
  • ¾ cup granulated sugar
  • 1 large egg beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ¼ teaspoon cinnamon
  • teaspoon salt
  • 1 ½ cups all-purpose flour
  • 1 cup chopped walnuts or chocolate chips plus more for topping if desired

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Grease and flour an 8.5×4.5-inch loaf pan or spray with baking spray.
  3. In a large bowl, mash bananas and mix with melted butter.
  4. Add sugar, egg, and vanilla; stir well.
  5. Sprinkle in baking soda, baking powder, cinnamon, and salt. Mix to combine.
  6. Add flour and walnuts or chocolate chips.
  7. Stir just until no flour remains.

Notes

  • Super ripe bananas with lots of brown spots give the best flavor and moisture.
  • You can reduce the sugar slightly if your bananas are very sweet.
