BBQ Chicken Pizza

This smoky-sweet pizza layers BBQ sauce, shredded chicken, mozzarella, smoked gouda, and red onions on a crisp crust—finished with fresh cilantro for the perfect bite.

Ingredients
  

  • 1 ball pizza dough homemade or store-bought
  • 1 ½ cups shredded cooked chicken
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup shredded smoked gouda or cheddar
  • ¼ red onion thinly sliced
  • Fresh cilantro for garnish

Method
 

  1. Preheat oven to 475°F with pizza stone if using.
  2. Roll/stretch dough into 12–14 inch circle on parchment.
  3. Spread BBQ sauce. Add half the cheese, then chicken, onions, and rest of cheese.
  4. Bake 12–15 mins until bubbly and golden.
  5. Garnish with cilantro, slice, and serve hot.

Notes

  • Rotisserie chicken works great for this recipe.
  • For extra heat, mix a bit of hot sauce or chipotle into the BBQ sauce.
  • No gouda? Use all mozzarella or swap with Monterey Jack.
