Ingredients
  

  • 2 tablespoons avocado oil
  • 1 pound potatoes cut into 1/2-inch cubes
  • 1 pound lean ground beef
  • 1/2 cup diced yellow onion
  • 1 red bell pepper diced
  • Kosher salt and black pepper to taste about 1–1 1/2 tsp salt
  • 4 ounces diced green chiles
  • 2 1/2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 cup chopped cilantro
  • 1/2 cup shredded cheese

Method
 

  1. Heat oil in a large skillet over medium-high.
  2. Add potatoes and cook, stirring often, until golden and just tender—about 6 minutes.
  3. Push potatoes to one side. Add beef, onion, and red bell pepper to the skillet.
  4. Season with salt and pepper. Cook, breaking up meat, until browned.
  5. Stir in green chiles, chili powder, cumin, smoked paprika, and cilantro.
  6. Cook until everything is tender and well combined, about 6–8 minutes.

Notes

  • Yukon Gold or red potatoes work best—they hold their shape and brown nicely.
