Beef Enchiladas

These easy beef enchiladas are stuffed with seasoned ground beef and onions, rolled in soft tortillas, and baked with enchilada sauce and gooey cheese. Perfect for a weeknight dinner or potluck!

Ingredients
  

  • 1 lb lean ground beef
  • 8 flour or corn tortillas
  • 2 cups enchilada sauce store-bought or homemade
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Sour cream for topping

Method
 

  1. Preheat oven to 375°F (190°C). Grease a baking dish.
  2. Brown ground beef and onions in a skillet over medium heat until onions are translucent.
  3. Add garlic, cumin, and chili powder; cook for 1 minute.
  4. Spoon beef mixture onto each tortilla, roll, and place seam-side down in dish.
  5. Pour enchilada sauce over tortillas and sprinkle with cheese.
  6. Bake uncovered for 20–25 minutes until bubbly and cheese melts.

Notes

• Corn tortillas give a more traditional texture, while flour tortillas are softer and easier to roll.
• For extra flavor, warm the tortillas before rolling.
• Want it spicier? Add jalapeños or hot sauce to the beef filling.
