Ingredients
  

  • Nonstick cooking spray for greasing
  • 1.2 stick unsalted butter
  • 3 large ripe bananas mashed
  • 1.5 banana halved lengthwise (for topping)
  • 3 large eggs
  • 2 cups all-purpose flour
  • 1 cup dark brown sugar plus more for sprinkling
  • 1.5 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon kosher salt
  • ½ teaspoon ground nutmeg

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Grease an 8.5-by-4.5-inch loaf pan with cooking spray.
  3. In a light-colored pan, melt and brown the butter.
  4. Remove from heat and let cool slightly.
  5. In a bowl, combine mashed bananas and eggs.
  6. In another bowl, whisk together flour, brown sugar, baking powder, cinnamon, salt, and nutmeg.
