Ingredients
  

For the Meatloaf
  • ½ medium onion diced
  • 1 teaspoon butter
  • 2 eggs
  • ¾ cup milk
  • ¾ cup Italian bread crumbs or seasoned
  • 2 pounds lean ground beef
  • 1 tablespoon ketchup or chili sauce
  • 1 teaspoon Italian seasoning
  • 2 tablespoons chopped fresh parsley or 2 tsp dried
  • 1 teaspoon kosher salt more to taste
  • ½ teaspoon black pepper
For the Sauce
  • ½ cup chili sauce
  • ½ cup ketchup
  • 2 tablespoons brown sugar optional

Method
 

  1. Preheat oven to 350°F.
  2. Line a rimmed baking sheet with foil and spray with cooking spray.
  3. In a small pan, sauté onions in butter until tender. Let cool.
  4. In a large bowl, whisk eggs, milk, and breadcrumbs. Let sit 5–10 minutes.

  7. Form into an 8"x4" loaf on the prepared pan. Bake for 40 minutes.

Notes

  • Use lean ground beef to prevent a greasy loaf, but avoid extra lean or it may turn out dry.
