Ingredients
  

  • 2 packs udon noodles
  • Chinese cabbage or any leafy green
  • 1 tbsp garlic minced
  • 1 white onion sliced
  • Salt to taste
  • Sugar to taste
  • 200 g fresh beef thinly sliced
Marinated Beef Ingredients
  • 1 clove garlic minced
  • 1 tsp sesame oil
  • 1 tbsp soy sauce
  • 1 tsp oyster sauce
  • 1 tsp cornstarch or potato starch + water slurry
  • 1 tsp Chinese white rice vinegar
Black Pepper Sauce
  • 3 tbsp dark soy sauce
  • 1 tbsp oyster sauce
  • 2 tsp fresh ground black pepper
  • 3 tbsp water
  • ½ tsp potato starch

Method
 

  1. Mix marinade ingredients and toss with sliced beef. Let sit 10 minutes.
  2. Boil udon noodles for 1–2 minutes, then drain.
  3. Stir black pepper sauce ingredients in a small bowl.
  4. Heat oil in wok, sauté garlic and onion.
  5. Add marinated beef and stir-fry until browned.
  6. Pour in black pepper sauce, stir on low until thick and glossy.
  7. Add udon noodles and cabbage, tossing to coat.

Notes

  • You can use frozen udon noodles for best texture—just rinse under warm water to separate.
  • Chinese cabbage, bok choy, or spinach all work great here.
