Blueberry Cheesecake Baked Oats

This single-serve baked oatmeal blends wholesome oats, egg, maple syrup, and blueberries into a fluffy, satisfying breakfast that tastes like a mini cheesecake. No refined sugar, and totally customizable!

Ingredients
  

  • ½ cup rolled oats
  • 1 egg
  • 1 tbsp maple syrup
  • ½ tsp vanilla extract
  • ¼ tsp baking powder
  • 2 –3 tbsp blueberries fresh or frozen
  • Optional: 1 tbsp cream cheese softened

Method
 

  1. Preheat oven to 350°F. Grease a ramekin.
  2. Blend oats, banana, yogurt, egg, syrup, vanilla, and baking powder.
  3. Stir in blueberries. Swirl in cream cheese if using.
  4. Pour into ramekin. Bake 25–28 minutes until set.
  5. Cool 5–10 mins before serving. Add toppings and enjoy!

Notes

  • Use quick oats for a lighter texture, or sub in oat flour for extra fluff.
  • Add mashed banana or Greek yogurt for extra moisture if preferred.
