Ingredients
  

Fritter Batter:
  • 1 tbsp butter melted
  • 1 cup sugar
  • 2 eggs
  • cup flour
  • 2 tsp baking powder
  • ½ tsp salt
  • cup milk
  • 2 cups fresh blueberries
Glaze:
  • ¼ cup butter
  • cups powdered sugar
  • 1 tsp vanilla
  • tbsp milk

Method
 

  1. In a mixing bowl, combine melted butter, sugar, and eggs until smooth.
  2. Sift together flour, baking powder, and salt.
  3. Mix into the egg mixture.
  4. Add milk and beat until batter is smooth and slightly thinner.
  5. Gently fold in blueberries.
  6. Heat oil in a skillet to 340–350°F.
  7. Drop ¼ cup batter into oil and fry until golden on both sides.

Notes

  • Don’t overcrowd the pan—fry in batches to keep the oil hot and fritters crisp.
  • Frozen blueberries can be used, but thaw and drain them first.
  • Adjust glaze consistency by adding more milk (thinner) or powdered sugar (thicker).
