Ingredients
  

  • 1 lb steak sirloin, skirt, or flank, thinly sliced
  • ½ teaspoon kosher salt
  • ½ teaspoon ground pepper
  • 2 tablespoons olive oil divided
  • 2 cloves garlic minced
  • 2 medium carrots peeled and thinly sliced into ¼" coins
  • ½ lb asparagus ends trimmed, sliced into 2" pieces
  • 1 medium red bell pepper thinly sliced
  • 1 medium yellow bell pepper thinly sliced
  • 6 oz snow peas
  • 2 tablespoons sesame seeds
Stir Fry Sauce
  • ¼ cup soy sauce or coconut aminos or tamari
  • 2 tablespoons rice vinegar
  • 2 tablespoons fresh orange juice
  • 2 tablespoons honey
  • 1 tablespoon cornstarch or arrowroot powder
  • 2 teaspoons sesame oil

Method
 

  1. Place steak in the freezer for 20–30 minutes to firm up.
  2. Slice thinly against the grain. Prep veggies and stir fry sauce.
  3. In a bowl, whisk together soy sauce, vinegar, orange juice, honey, cornstarch, and sesame oil. Set aside.
  4. Heat 1 tablespoon olive oil in a large skillet or wok over high heat.
  5. Add steak, season with salt and pepper, and stir fry for 3–4 minutes.
  6. Remove and set aside.
  7. Add remaining oil. Stir fry carrots and asparagus for 3 minutes.

Notes

  • For best texture, slice steak thin and stir fry in batches if your pan is small.
