Ingredients
  

  • 4 cups chopped broccoli
  • 1 10 oz can cream of chicken soup
  • 1 cup mayonnaise or Miracle Whip or substitute Greek yogurt/sour cream
  • 1/4 cup butter melted (1/2 stick)
  • 2 large eggs slightly beaten
  • 1/2 medium yellow onion finely chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups extra-sharp cheddar cheese divided
  • 1/2 sleeve Ritz crackers crushed

Method
 

  1. Preheat oven to 350°F. Grease an 8x8-inch casserole dish.
  2. Steam broccoli 5 minutes until tender.
  3. Chop into bite-size pieces and place in a bowl.
  4. Add soup, mayonnaise, butter, eggs, onion, salt, and pepper. Mix well.
  5. Stir in 3/4 cup cheddar cheese.
  6. Pour mixture into prepared dish.
