Ingredients
  

  • ½ pound ground beef
  • 1 packet taco or burrito seasoning
  • 1 teaspoon salt
  • 1 cup black beans
  • cups cooked white rice
  • ¼ cup corn kernels
  • ¼ cup shredded cheese
  • ¼ red onion chopped
  • Fresh cilantro chopped
  • 2 tablespoons sour cream
  • ¼ cup cherry tomatoes halved
  • 1 cup lettuce chopped
  • Avocado diced (optional)

Method
 

  1. Heat a skillet over medium-high. Add ground beef, taco seasoning, and salt.
  2. Cook, stirring often, until browned and fully cooked.
  3. In each bowl, layer rice, cooked beef, black beans, corn, cherry tomatoes, shredded cheese, red onion, and lettuce.
  4. Top with sour cream, fresh cilantro, and avocado if using. Serve immediately.
