Method
- Brown sausage in oil and set aside.
- Sauté onion, celery, and bell pepper until soft. Add garlic and cook 1 minute.
- Add Cajun spices, broth, and potatoes. Simmer 20–25 minutes.
- Return sausage to pot, stir in cream and cheese. Simmer 5 more minutes.
- Garnish with parsley and serve hot.

Notes
• Use smoked sausage or kielbasa if andouille isn't available.
• Add more cayenne for extra heat or skip it for a milder version.
• For a thicker soup, mash a few potatoes in the pot before adding cream.
