Ingredients
  

  • 2 pounds ground beef or ground turkey
  • 2 large onions thinly sliced and caramelized
  • 1 cup breadcrumbs or gluten-free
  • ½ cup shredded Swiss or Gruyere cheese
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Optional: 1 packet onion soup mix

Method
 

  1. Caramelize onions over medium heat in olive oil for 20–25 minutes until golden. Let cool.
  2. In a large bowl, combine beef, breadcrumbs, cheese, egg.
  3. Garlic powder, thyme, salt, pepper, and cooled onions. Mix gently.
  4. Shape into a loaf on a lined baking sheet or place in a loaf pan.
  5. Preheat oven to 375°F (190°C).
  6. Bake for 50–60 minutes or until internal temp reaches 160°F (71°C).
  7. Let rest for 5–10 minutes before slicing. Serve warm.

Notes

  • Make sure to cool the onions before mixing them in—this helps the meatloaf hold its shape.
  • Gruyère adds a nuttier flavor, while Swiss keeps it classic and melty.
