Ingredients
  

  • 4 boneless skinless chicken breasts (1.5 lbs)
  • 3 cloves fresh garlic minced
  • 1 cup panko breadcrumbs
  • 2 cups marinara sauce store-bought or homemade
  • 1.5 cups shredded whole milk mozzarella cheese
  • 0.5 cup freshly grated parmesan cheese
  • 2 tsp Italian seasoning
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 2 large eggs

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Grease a baking dish and season the chicken with salt and pepper.
  3. In one bowl, whisk the eggs and garlic. In another, mix panko with Italian seasoning.
  4. Dip chicken into egg mixture, then coat with breadcrumb mixture.
  5. Heat olive oil in a skillet and sear chicken 3–4 minutes per side until golden.
  6. Place seared chicken in baking dish.
  7. Top with marinara, mozzarella, and parmesan.
