Cheesy Ground Beef Sandwiches

These cheesy ground beef sandwiches are packed with seasoned meat, sautéed veggies, and two types of melted cheese. Toasted brioche buns take them over the top. Perfect for busy weeknights, game days, or feeding a hungry crowd!

Ingredients
  

Filling
  • 1 tablespoon olive oil
  • 1 pound lean ground beef
  • 1 small onion finely diced
  • 1 green pepper diced
  • 4 cloves garlic minced
  • 1 cup reduced sodium beef broth
  • 1 tablespoon cornstarch
  • teaspoons beef bouillon
  • 2 tablespoons ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 tsp each dried oregano dried parsley
  • ½ tsp each salt pepper, dried basil, paprika
  • ¼ tsp red pepper flakes more or less to taste
  • ¾ cup freshly grated sharp cheddar cheese
Buns
  • 6 brioche hamburger buns
  • Softened butter or mayo for brushing (optional)
  • 6 slices provolone cheese

Method
 

  1. Preheat oven to 400°F. Split buns, place cut-side up on a baking sheet.
  2. Brush with butter/mayo if desired. Toast for 5 minutes.
  3. Heat oil in a skillet over medium-high. Add beef, onion, and green pepper.
  4. Cook until browned and soft. Add garlic and cook 30 seconds.
  5. Whisk beef broth, cornstarch, and bouillon.
  6. Add to skillet with ketchup, Worcestershire, Dijon, and seasonings.

Notes

• You can swap ground beef for ground turkey or chicken if preferred.
• Toasting the buns first helps them stay crisp and hold up better with the filling.
• Feel free to use pre-shredded cheese for convenience, though fresh melts creamier.
