Cheesy Lasagna Roll Ups

These lasagna roll ups are packed with savory beef, creamy ricotta, rich marinara, and plenty of melted cheese. Rolled individually for easy serving and beautiful presentation, this comforting dinner is a perfect make-ahead or freezer-friendly option.

Ingredients
  

  • 12 lasagna noodles cooked and drained
  • 1 lb ground beef
  • 1 small onion finely diced
  • 3 cups marinara sauce
  • 2 cloves garlic minced
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 15 oz ricotta cheese
  • 1 large egg
  • 2 cups shredded mozzarella cheese divided
  • 1/2 cup grated parmesan cheese
  • Fresh parsley or basil for garnish optional

Method
 

  1. Boil lasagna noodles until al dente. Drain and lay flat.
  2. In a skillet, cook onion and beef until browned. Drain fat.
  3. Add marinara, garlic, Italian seasoning, salt, and pepper. Simmer.
  4. In a bowl, mix ricotta, egg, 1 cup mozzarella, parmesan, salt, and pepper.
  5. Spread ricotta mixture on noodles, top with meat sauce, and roll up.
  6. Spread some meat sauce in baking dish. Place roll ups seam-side down.

Notes

  • Lay the noodles flat right after boiling to avoid tearing or sticking.
  • You can substitute ground turkey or sausage for beef.
