Ingredients
  

  • lbs ground beef 85% lean
  • ½ cup yellow onion finely diced
  • ¼ cup green bell pepper finely diced
  • 3 eggs room temperature
  • 4 oz sharp cheddar cheese grated
  • ¼ cup whole milk
  • Ritz crackers 2 sleeves or ~60–64 crackers, crushed
  • 1 teaspoon salt
  • 1 teaspoon pepper
Meatloaf Glaze:
  • ½ cup ketchup
  • ½ cup brown sugar
  • 1 tablespoon yellow mustard
  • 1 teaspoon Worcestershire sauce

Method
 

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment.
  2. Whisk all glaze ingredients in a small bowl and set aside.
  3. Crush Ritz crackers in a bag with a rolling pin.
  4. In a large bowl, combine ground beef, onion, bell pepper, eggs, cheese, milk, crushed crackers, salt, and pepper.

Notes

  • You can substitute crushed saltines or breadcrumbs if you’re out of Ritz, but you’ll miss that buttery touch!
  • Want extra cheesy? Add more cheddar or mix in some mozzarella.
  • Bake in a loaf pan if you prefer cleaner edges—just adjust baking time slightly.
