Ingredients
  

  • 1 ¼ cups powdered sugar divided
  • ½ cup softened butter
  • 1 cup flour
  • ¼ cup instant oats
  • ¼ cup finely chopped sweetened coconut
  • ¼ cup finely chopped walnuts
  • 1 pinch salt
  • 15 maraschino cherries finely chopped

Method
 

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Cream butter with ¼ cup powdered sugar until smooth.
  3. Mix in flour, oats, coconut, walnuts, and salt.
  4. Fold in cherries.
  5. Spoon dough onto baking sheet, spacing 2 inches apart.
  6. Bake 18 minutes, until bottoms are lightly golden.
  7. Roll warm cookies in remaining powdered sugar until fully coated.
