Ingredients
  

  • 8 ounces penne pasta
  • 2 boneless skinless chicken breasts, diced into ½-inch pieces (about 1½ pounds)
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 tablespoon olive oil
  • 1 24-ounce jar of marinara sauce (3 cups)
  • cup shredded parmesan cheese
  • 2 teaspoons Italian seasoning
  • ½ teaspoon garlic powder
  • cups shredded mozzarella cheese

Method
 

  1. Cook the penne pasta just until al dente.
  2. Drain and reserve ½ cup of pasta water.
  3. Season chicken with salt and pepper.
  4. Heat olive oil in a large skillet over medium-high heat.
  5. Add chicken and cook for 5–7 minutes until browned and cooked through.
  6. Add marinara sauce, Italian seasoning, garlic powder, parmesan, cooked pasta, and reserved water to the skillet.

Notes

  • Use rotini or rigatoni instead of penne for a fun twist.
  • For a spicy kick, add red pepper flakes when adding the sauce.
