Chicken Stuffed Jalapenos

These chicken stuffed jalapeños are creamy, cheesy, and perfectly spicy. They make a fantastic appetizer for game day, parties, or anytime you’re craving a savory bite with a little kick.

Ingredients
  

  • 12 medium-sized jalapeños halved and seeded
  • 1 cup shredded cooked chicken
  • 4 oz cream cheese softened
  • 1 cup shredded cheddar cheese or preferred variety
  • 2 teaspoons salsa
  • 1 ½ teaspoons ground cumin
  • 1 ¼ teaspoons chili powder optional
  • ¼ teaspoon salt

Method
 

  1. Preheat oven to 400°F (200°C). Line baking sheet with foil.
  2. Slice jalapeños lengthwise, remove seeds and membranes.
  3. Mix cream cheese, cheddar, salsa, cumin, chili powder, and salt until smooth. Fold in chicken.
  4. Fill each jalapeño half with about 1 teaspoon of mixture.
  5. Bake 20 minutes, until cheese melts and peppers are tender.
  6. Cool slightly before serving. Serve warm.

Notes

  • For less heat, use mini sweet peppers instead of jalapeños.
  • You can prepare them ahead and refrigerate before baking.
  • Great with ranch or sour cream for dipping.
