Ingredients
  

Beef
  • ½ tbsp olive oil
  • ½ onion chopped
  • 1 lb lean ground beef
  • 1 tbsp chili powder
  • 1 tsp each ground cumin smoked paprika, onion powder, dried oregano, salt
  • ¼ tsp black pepper
  • ¼ tsp cayenne pepper adjust to taste
  • 4 –6 garlic cloves minced (or 1 tsp powder)
  • ¼ cup salsa
  • 1 4 oz can mild diced green chilies
Burritos
  • 6 –8 large flour tortillas 10–12 inch
  • 2 cups cilantro lime rice or seasoned plain rice
  • 2 cups black beans or pinto beans rinsed and drained
  • 1 recipe chipotle sauce or sour cream or Greek yogurt
  • Guacamole homemade or store-bought
  • 1 ½ cups shredded sharp or Monterey Jack cheese

Method
 

  1. If baking, preheat oven to 400°F.
  2. Prepare a baking rack on a sheet pan and spray with oil.
  3. Heat oil in skillet. Sauté onion 2 minutes.
  4. Add beef and cook, crumbling. Drain excess grease.
  5. Stir in seasonings, garlic, salsa, and chilies.
  6. Cook until fully done. Adjust spice if needed.
  7. Warm tortillas in microwave or skillet.
