- Preheat oven to 350°F (175°C).

- In a large bowl, whisk oats, flour, cocoa powder, baking soda, salt, cinnamon, and brown sugar.
- In a separate bowl, whisk butter, egg, and vanilla.
- Add wet mixture to dry ingredients.
- Fold in zucchini and 1 cup chocolate chips.

Notes
These cookies are extra moist thanks to zucchini—no one will even notice it’s there.
Swap in dark chocolate or white chocolate chips for variety.
Add chopped nuts for crunch if desired.
