These Chocolate Quinoa Peanut Butter Bites are a deliciously crunchy, rich treat that combines dark chocolate and nutty quinoa with an optional creamy peanut butter twist. Perfect as a guilt-free snack or a quick energy boost, they’re easy to make and naturally gluten-free.

Ingredients
  

  • 11½ ounces dark chocolate I used 72% cacao
  • ½ cup peanut butter optional
  • 3 cups puffed quinoa
  • Flaky salt for garnish optional – Maldon or any flaky sea salt or kosher salt

Method
 

  1. Prepare a parchment-lined baking sheet or lightly spray a mini muffin pan.
  2. Melt chocolate and peanut butter in the microwave at 20% power in short bursts, stirring between each, until smooth.
  3. Or melt over a double boiler.
  4. Stir in puffed quinoa until evenly coated.
  5. Scoop into prepared pan or tray using a tablespoon or scoop.
  6. Sprinkle with flaky salt while still wet.
