Ingredients
  

Banana Bread Batter
  • 3 overripe mashed bananas
  • 4 tbsp melted vegan butter
  • ¾ cup maple syrup
  • 1 cup unsweetened almond or oat milk
  • 1 tsp vanilla extract
  • 1 ½ tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ¼ tsp salt
  • 1 ½ cups regular or gluten-free all-purpose flour
  • 1 cup old-fashioned rolled oats
Cinnamon Swirl
  • 4 tbsp melted vegan butter
  • cup light brown sugar
  • 2 tbsp cinnamon
Vegan Cream Cheese Frosting
  • ¾ cup powdered sugar
  • 2 tbsp melted vegan butter
  • 2 oz softened vegan cream cheese

Method
 

  1. Preheat oven to 375°F. Grease a metal loaf pan with nonstick spray.
  2. In a large bowl, mash bananas.
  3. Stir in melted butter, maple syrup, plant milk, vanilla, cinnamon, baking powder, baking soda, and salt.
  4. Add flour and oats, mix until batter forms.
  5. Pour batter into the pan. Mix swirl ingredients in a bowl and drizzle over batter.
  6. Swirl gently with a spoon.
  7. Bake for 55–60 minutes, until golden and toothpick comes out clean.

Notes

  • Let the loaf cool for at least 10 minutes before slicing—it helps hold its shape.
  • For a stronger cinnamon swirl, double the cinnamon mixture and swirl deeper.
  • Use ripe bananas with lots of brown spots for best flavor and moisture.
