Ingredients
  

  • 1 recipe for double pie crust
  • lbs Granny Smith Apples 6–7 apples, thinly sliced to 7 cups
  • tsp cinnamon
  • 8 Tbsp unsalted butter
  • 3 Tbsp all-purpose flour
  • ¼ cup water
  • 1 cup granulated sugar
  • 1 egg + 1 Tbsp water for egg wash

Method
 

  1. Prepare crust and chill. Preheat oven to 425°F.
  2. In saucepan, melt butter, whisk in flour.
  3. Stir in water and sugar, boil, then simmer 3 min.
  4. Toss sliced apples with cinnamon. Pour sauce over apples and stir.
  5. Roll out bottom crust and transfer to pie plate. Add apple mixture.
  6. Cut second crust into strips and make lattice top. Brush with egg wash.

Notes

  • Use a mix of tart and sweet apples for more depth of flavor.
