Ingredients
  

Meatloaf
  • 1 ½ lbs lean ground beef or beef/pork blend
  • 1 cup diced onion finely chopped
  • ¾ cup bread crumbs or panko
  • cup milk or broth/water
  • 2 eggs
  • 1 tsp tomato paste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp salt
  • ¼ tsp ground black pepper
Topping
  • ¾ cup ketchup
  • 1 Tbsp white vinegar

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Line a baking sheet with foil.
  3. In a large bowl, mix ground beef, onion, bread crumbs, milk, eggs, tomato paste, garlic powder, onion powder, salt, and pepper until combined.
  4. Shape into a loaf by hand or pack into a greased loaf pan and flip onto the baking sheet.
  5. Remove the pan.
  6. Bake uncovered for 40 minutes.
  7. Mix ketchup and vinegar in a small bowl.

Notes

  • Use broth instead of milk for a richer flavor.
