Ingredients
  

For Meatloaf:
  • 2 pounds fresh ground beef
  • 1 cup breadcrumbs
  • 1 onion finely chopped
  • 2 cloves garlic minced
  • 2 large eggs beaten
  • ¼ cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper to taste
For Mushroom Gravy:
  • 2 cups fresh mushrooms sliced
  • 4 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • 2 cups beef broth
  • ½ cup heavy cream
  • Salt and freshly ground black pepper to taste

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Grease a casserole dish or line a baking sheet with parchment paper.
  3. In a large bowl, combine ground beef, breadcrumbs, onion, garlic, eggs, ketchup.
  4. Worcestershire sauce, thyme, oregano, salt, and pepper.
  5. Mix gently until just combined.
  6. Shape the meat mixture into a loaf and place in the prepared dish.
  7. Bake for 50–60 minutes, until internal temperature reaches 160°F (71°C).

Notes

• Use 80/20 ground beef for juicier texture.
• Do not overmix the meat to keep it tender.
