Ingredients
  

For the Meatloaf
  • ½ medium onion diced
  • 1 teaspoon butter
  • 2 eggs
  • ¾ cup milk
  • ¾ cup Italian or seasoned breadcrumbs
  • 2 pounds lean ground beef
  • 1 tablespoon ketchup or chili sauce
  • 1 teaspoon Italian seasoning
  • 2 tablespoons chopped fresh parsley or 2 teaspoons dried
  • 1 teaspoon kosher salt more to taste
  • ½ teaspoon black pepper
For the Glaze
  • ½ cup chili sauce
  • ½ cup ketchup
  • 2 tablespoons brown sugar optional

Method
 

  1. Preheat oven to 350°F. Line a rimmed baking pan with foil and spray with cooking spray.
  2. Sauté onion in butter over medium-low heat until soft. Cool completely.
  3. In a bowl, mix eggs, milk, and breadcrumbs. Let sit 5–10 minutes.
  4. Add ground beef, onions, ketchup or chili sauce, seasoning, parsley, salt, and pepper.
  5. Mix gently to combine.
  6. Shape into an 8"x4" loaf on the pan. Bake for 40 minutes.
  7. Mix glaze ingredients. Spread over meatloaf.

Notes

  • For even texture, make sure onions are fully cooled before adding to the beef.
  • Use a meat thermometer to avoid overbaking—160°F is your sweet spot.
  • Brown sugar in the glaze is optional but adds beautiful depth and stickiness.
