Ingredients
  

For the Meatloaf:
  • Ground beef 80–85% lean
  • 3 cloves fresh garlic minced
  • 1 medium onion chopped
  • 2 eggs
  • 1 cup bread crumbs
  • 2 tablespoons Worcestershire sauce
  • cup milk
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
For the Glaze:
  • ¾ cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon mustard

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Line a loaf pan or baking sheet with parchment paper or grease it lightly.
  3. In a large bowl, combine beef, garlic, onion, eggs, breadcrumbs
  4. Worcestershire sauce, milk, Italian seasoning, salt, and pepper.
  5. Mix until just combined.
  6. Shape into a loaf and place in prepared pan.
  7. In a small bowl, mix ketchup, brown sugar, and mustard.

Notes

  • Use lean ground beef, but not too lean—some fat keeps it moist.
  • Fresh breadcrumbs or panko both work well.
  • You can sauté the onion and garlic beforehand for a milder flavor.
