Cod with Roasted Red Pepper Sauce

Ingredients
  

For the Cod:
  • 4 cod fillets about 6 oz each
  • 2.5 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon paprika optional, for extra flavor
For the Roasted Red Pepper Sauce:
  • 2 roasted red peppers jarred or homemade
  • ¼ cup onion finely chopped
  • 2.5 cloves garlic minced
  • ½ cup heavy cream or coconut cream for a dairy-free version
  • ¼ cup chicken broth or vegetable broth
  • 1 tablespoon olive oil
  • 1.5 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Method
 

  1. Pat cod fillets dry and season with salt, pepper, and paprika.
  2. Heat 2 tbsp olive oil in a skillet over medium heat.
  3. Sear cod for 3–4 minutes per side until flaky. Remove and set aside.
  4. Add 1 tbsp olive oil to the same skillet. Sauté onion and garlic for 2–3 minutes.
  5. Add roasted red peppers, smoked paprika, and oregano.
  6. Cook another 2 minutes.
  7. Blend the mixture until smooth and return to the pan.

Notes

  • Jarred roasted red peppers work great, but homemade adds extra flavor.
  • Use coconut cream for a dairy-free twist with a slightly sweet undertone.
