Ingredients
  

  • 1 1/2 cups cottage cheese
  • 4 eggs
  • 1 tsp vanilla extract
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • 1 cup all-purpose flour
  • 1/4 cup canola oil for frying

Method
 

  1. In a large bowl, combine cottage cheese and eggs. Mix in vanilla extract and sugar.
  2. Add baking powder and stir in flour gradually until a thick batter forms.
  3. Heat a skillet over medium heat and add canola oil.
  4. Spoon batter into the skillet to form pancakes.
  5. Fry until golden brown on each side, about 2–3 minutes per side.
  6. Serve warm with maple syrup, jam, or your favorite toppings.
