Ingredients
  

  • 1 cup cottage cheese
  • 1/2 cup diced ham
  • 1/2 cup diced red bell pepper
  • 4 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Chives for garnish

Method
 

  1. Preheat oven to 375°F (190°C) and grease a 9-inch pie dish.
  2. In a large bowl, whisk together eggs, milk, onion powder, salt, and pepper.
  3. Stir in cottage cheese, ham, bell pepper, cheddar, and Parmesan.
  4. Pour mixture into prepared pie dish.
  5. Bake for 30–35 minutes, until set and golden on top.
  6. Let cool slightly. Garnish with chopped chives and serve.
