This cool and creamy crab salad is made with crisp cucumber, juicy tomatoes, and imitation crab tossed in a garlicky mayo dressing. It’s the perfect make-ahead dish for BBQs, potlucks, or just a breezy no-cook dinner.

Ingredients
  

  • 1 lb 16 oz imitation crab meat, chopped or shredded
  • 1 English cucumber diced small
  • 2 medium tomatoes diced and drained
  • 1/4 cup chopped green onions
  • 3 cloves garlic pressed
  • 1/2 cup mayonnaise or to taste

Method
 

  1. Chop or shred crab into small pieces.
  2. Dice cucumber and tomatoes. Drain tomatoes.
  3. In a large bowl, combine crab, cucumber, tomatoes, and green onions.
  4. Mix mayo and garlic in a separate bowl.
  5. Add dressing to salad and toss. Chill before serving.

Notes

  • For best texture, use firm tomatoes (like Roma) and be sure to drain excess liquid.
