Ingredients
  

For the Beef:
  • 1 lb sirloin steak or filet mignon thinly sliced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tbsp olive oil
  • 1 tbsp butter
For the Sauce:
  • 1 tbsp butter
  • 1 small onion finely diced
  • 2 cloves garlic minced
  • 8 oz cremini or button mushrooms sliced
  • ½ tsp smoked paprika
  • 1 tbsp Dijon mustard
  • ¼ cup dry white wine or beef broth
  • 1 cup beef broth
  • 1 tsp Worcestershire sauce
  • ¾ cup sour cream or crème fraîche
  • 1 tsp fresh thyme or ½ tsp dried thyme
  • Salt and pepper to taste
For Serving:
  • 8 oz cooked egg noodles
  • 1 tbsp chopped parsley for garnish
  • Extra black pepper and Parmesan cheese optional

Method
 

  1. Season beef strips with salt and pepper.
  2. Heat olive oil and butter in a skillet over medium-high heat.
  3. Sear beef in batches for 1–2 minutes per side until browned. Set aside.
  4. Melt butter in the same skillet over medium heat.
  5. Sauté onion and garlic until softened.
  6. Add mushrooms and cook until golden.
  7. Stir in smoked paprika and Dijon mustard.

Notes

• Don't overcook the beef—just sear briefly to keep it tender.
• Crème fraîche adds extra richness if you prefer over sour cream.
