Creamy Chicken Alfredo Lasagna Roll-Ups

These chicken Alfredo roll-ups are a creamy twist on classic lasagna. Cooked lasagna noodles are filled with a cheesy chicken mixture, rolled up, and baked under layers of Alfredo sauce and melty mozzarella. It’s rich, satisfying, and surprisingly easy to make!

Ingredients
  

  • 12 lasagna noodles
  • 2 cups cooked chicken shredded
  • 2 cups ricotta cheese
  • 1 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • 3 cups Alfredo sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

Method
 

  1. Boil lasagna noodles until al dente. Drain and lay flat on a towel.
  2. In a bowl, combine chicken, ricotta, 1 cup mozzarella.
  3. Parmesan, garlic powder, Italian seasoning, salt, and pepper.
  4. Spread Alfredo sauce on the bottom of a baking dish.
  5. Roll each noodle with 1/4 cup of filling and place seam-side down.
  6. Pour remaining Alfredo sauce on top.
  7. Sprinkle with the remaining mozzarella.

Notes

• Use rotisserie chicken for a fast shortcut.
• Want extra sauce? Serve with an extra ladle of warmed Alfredo on the side.
• You can assemble these ahead of time and refrigerate until ready to bake!
