Ingredients
  

  • ½ cup milk any kind
  • cups cottage cheese whole milk preferred
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 cup freshly grated Parmesan cheese
  • ½ teaspoon Italian seasoning
  • ½ cup pasta cooking water as needed
  • Kosher salt and cracked black pepper to taste
  • 12 ounces pasta of choice

Method
 

  1. Blend the milk and cottage cheese in a high-speed blender until smooth.
  2. Heat olive oil in a medium saucepan over medium heat.
  3. Add minced garlic and cook until fragrant, 1–2 minutes.
  4. Reduce heat to low. Pour in the cottage cheese mixture.
  5. Add Parmesan and Italian seasoning. Stir gently to melt the cheese.
  6. Cook the pasta according to package instructions.
  7. Reserve ½ cup of the cooking water and drain the rest.
