Ingredients
  

  • 8 ounces uncooked fettuccine
  • 4 ounces cream cheese softened
  • 2 tablespoons butter
  • 1 cup heavy/whipping cream
  • 2 large cloves garlic minced
  • 1 cup freshly grated parmesan cheese
  • Salt & pepper to taste

Method
 

  1. Boil a salted pot of water and cook fettuccine until al dente.
  2. Reserve a splash of pasta water before draining.
  3. Microwave the cream cheese until soft.
  4. In a skillet over medium heat, add butter, cream cheese, cream, and garlic.
  5. Stir until the cream cheese melts smoothly into the sauce.
  6. Let the sauce gently bubble for 3–4 minutes to reduce slightly.

Notes

  • Freshly grated parmesan melts best and prevents graininess.
  • Soften the cream cheese fully to avoid lumps in the sauce.
