Ingredients
  

  • 2 15-ounce cans sweet corn, drained
  • 1 15-ounce can black beans, drained
  • 1 10-ounce can Rotel, drained
  • 1 bell pepper diced (red, green, or yellow)
  • 1 cup shredded cheddar cheese
  • 1 9.25-ounce bag Fritos
Dressing
  • cup sour cream
  • 1 Tablespoon extra virgin olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon ground cumin

Method
 

  1. In a small bowl, combine all dressing ingredients. Whisk until smooth.
  2. In a large bowl, combine corn, beans, Rotel, bell pepper, and cheese.
  3. Pour the dressing over the salad and mix gently.
  4. Just before serving, fold in Fritos to keep them crispy.
  5. Serve immediately with extra toppings if desired.
