Ingredients
  

For the Chicken:
  • 4 small to medium chicken breasts or 2 large halved
  • Salt and pepper to taste
  • 2 tablespoons olive oil
For the Creamy Garlic Sauce:
  • 3 –4 cloves garlic minced
  • 1 cup light cream or heavy cream
  • 1 tablespoon Italian seasoning or oregano
  • 1/2 cup parmesan cheese grated
  • 1 cup spinach chopped (optional)

Method
 

  1. Season chicken with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Cook chicken until golden and cooked through, then set aside.
  4. Lower heat and sauté garlic for 30 seconds.
  5. Pour in cream and stir.
  6. Add seasoning and parmesan; stir until smooth.
  7. Add spinach if using and simmer briefly.

Notes

• Use heavy cream for a richer sauce, or light cream for a lighter version.
